Strawberry is the flavor that most people outside Japan encounter first when they try Hi-Chew, and for good reason: it is the version that most directly demonstrates what the format is capable of doing with a fruit flavor.
Where the grape version delivers the deep, dark sweetness of concentrated Japanese Kyoho grape, the strawberry is brighter, more immediately aromatic, and considerably more tart — the kind of strawberry flavor that sits closer to the actual fruit than to a strawberry-flavored confection.
The inner layer is made with concentrated strawberry juice, colored a vivid red-pink from red cabbage extract.
The outer white layer contains lactic acid bacteria beverage — a dairy-derived ingredient that adds a faint, clean yogurt-like quality to the base, providing a subtle creamy note that works with the fruit’s acidity rather than against it.
The combination produces a strawberry flavor with more depth than a single-ingredient approach would achieve: the tartness of the fruit in front, the creaminess of the lactic beverage softening it from behind.
The chew is the same as across the Hi-Chew lineup: firm enough to feel satisfying at the first bite, softening progressively as the layers integrate, releasing more of the fruit flavor as it does.

The strawberry that tastes like strawberry. The version that tends to convert people who weren’t sure about the format.
