Into that base, Tirol has folded ara-shio — coarse, unrefined sea salt from the Sea of Okhotsk, harvested from the cold, mineral-rich waters off the coast of Hokkaido.

It is a salt valued in Japanese cooking for its rounded flavor and natural mineral content, and here it does exactly what good salt should: it sharpens the vanilla, adds the faintest savory edge, and keeps each piece from ever feeling too sweet.
