Milch Japan Yufuin Milch Krapfen Baked Donut

Yufuin is one of Japan’s most celebrated hot spring resort towns — a valley in Oita Prefecture at the foot of Mount Yufu, known for its ryokan, its morning mist over the rice paddies, and, more recently, for the dairy products produced from its clean-aired highland farms.

The milk from Yufuin’s cows has a particular richness and clean sweetness that has made it the foundation of local confectionery culture, and it is that milk that defines the Milch Krapfen.

Krapfen is the Austrian and Bavarian word for a doughnut — traditionally a fried, jam-filled pastry associated with Carnival season in German-speaking countries.

Milch Japan’s version takes the name and adapts it entirely for the Japanese palate and the realities of souvenir confectionery: instead of frying, each piece is baked one at a time by a pâtissier using a specialized machine — the first of its kind to arrive in Kyushu — that produces a texture that is soft, fluffy, and milky rather than the denser, oilier quality of a fried doughnut.

The result is lighter and more delicate than the European original, with the clean dairy fragrance of Yufuin milk running through each piece.

The shop sits directly in front of Yufuin Station, which places it at the first and last point of contact for most visitors to the town.

The Krapfen’s sweet fragrance has become part of what the arrival and departure experience at Yufuin smells like.
