Chocolat Orange — the French confectionery pairing that dates back to the luxury chocolate houses of 19th-century Europe — is one of those combinations that succeeds because the two elements work on fundamentally different flavor registers: the bitterness and depth of dark chocolate against the bright, aromatic citrus oil of orange peel, each making the other more itself in the contrast.
Bourbon’s version puts that pairing into a small, moist cake format that delivers both without requiring a pâtisserie visit or a box of Belgian truffles.
The chocolate cake base is built on cacao mass and cocoa powder together — the same two-source approach used in the strongest chocolate snacks in the Bourbon lineup, giving the bake both the fat-rounded depth of the mass and the more assertive bitterness of the powder.
Liquid whole egg and margarine keep the crumb moist and tender, which is what Bourbon describes as the “shittori” quality — the slightly dense, yielding texture that distinguishes a properly made chocolate cake from a dry chocolate biscuit.
The orange peel is candied — soaked in sugar syrup and spirits before being folded into the batter — which has two effects.
The sugaring softens the peel’s natural bitterness and makes it yielding rather than chewy, and the spirits (洋酒) carry the orange’s aromatic oils into the surrounding batter during baking, so the citrus fragrance runs through each piece rather than existing only where the peel pieces land.
The result is a moist, aromatic cake in which every bite smells of both chocolate and orange.
