Sokan Umi no Pickles Pickled Wakame Stem Snack

Umi no Pickles means pickles of the sea, and the name is doing real work.

This is the same kuki mekabu — the dense stem section at the base of the wakame plant — that Sokan uses across its seaweed range, but the seasoning goes Western.

Three fruit vinegars are blended into a pickling brine, and the mekabu is steeped in it, which turns a Japanese sea vegetable into something that behaves like a jar of cornichons.

The acidity is the point of difference.

Where Sokan’s lightly salted version leaves the marine flavour mostly alone, the vinegar here comes forward — bright, fruit-edged and sharp, cut with just enough sugar and mirin to round the edges off.

Against that, the mekabu’s firm korikori snap reads differently: crunchier, cleaner, closer to a pickled vegetable than to a seaweed snack.

Sokan’s own pitch is guilt-free, a small hunger filled without consequence, and at 19 kcal a bag with 0.8 g of dietary fibre the arithmetic supports it.

Sokan is a Tochigi company that specialises in sozai-gashi, snacks made from one whole ingredient rather than assembled from flour and sugar, and Umi no Pickles is its most Western-facing product.

For anyone outside Japan who has only met seaweed as a sushi wrapper, a bag of tangy, crunchy pickled sea vegetable is an unexpected thing — good on its own, good with beer, and genuinely useful chopped over a salad.
