The plum version of Maeshima’s Oshaburi Kombu takes the same slow-eating format as the original and adds the flavor combination that Japanese snack culture has paired with kelp for generations: ume plum and shiso, the tart-and-herbal duo that shows up across everything from onigiri fillings to pickles to seasoning powders.
The kelp base is the same Hokkaido-grown kombu — clean, mineral-rich, and naturally high in glutamates — lightly seasoned and then layered with Kishu ume fruit and shiso.
Kishu, in Wakayama Prefecture, is Japan’s most celebrated ume-producing region, and the variety grown there has a particular brightness and acidity that distinguishes it from plums grown elsewhere.
The shiso adds a herbal, faintly anise-like note that sits between the saltiness of the kelp and the tartness of the plum, tying the combination together.
