Kuki wakame is the stem — the thick central rib running up the wakame frond, firmer and denser than the leafy parts that end up in miso soup.
Sokan blanches and salt-cures it, cuts it into pieces and seasons it lightly, and the texture is what the bag advertises in red across the top: shaki-shaki, a crisp, watery snap with real resistance, closer to a raw vegetable stem than to anything dried.
The red kokusan badge on the front is the other half of the proposition.
It means domestically produced, and on a wakame product in Japan that carries weight — most seaweed sold here is imported, Japanese-grown wakame commands a premium, and Sokan states the origin on the front of the bag rather than burying it in the ingredient panel.
The seasoning is deliberately minimal: salt, a little sugar, mirin, and nothing else worth naming.
That restraint is the point of buying the domestic version, because what comes through is the wakame’s own flavour — clean, briny, faintly sweet — rather than a coating.
Pieces come individually wrapped inside the 68 g bag, which makes this a picking snack rather than a sitting-down one: a few at a desk, a few with a beer.
Sokan is a Tochigi company specialising in sozai-gashi, snacks made from a single whole ingredient rather than assembled from flour and sugar, and seaweed is where it built its reputation.
For anyone outside Japan who has only met wakame floating in soup, eating it dry, salty and crunchy from a bag is an entirely different proposition.
