The standard Miyako Kombu is defined by the bright, clean acidity of brewed vinegar meeting domestic kombu’s oceanic umami.
The Umezu edition takes that foundation and redirects it — replacing the vinegar’s sharp clarity with something rounder, more fragrant, and unmistakably Japanese.
Umezu — plum vinegar — is the liquid produced during the salting of ume plums, carrying the fruit’s natural tartness along with a warm, slightly floral quality that brewed vinegar does not have.
Where the standard Miyako Kombu meets the kombu with directness, the umezu meets it more gently, softening the acidity into something the official description calls honno ri ume fuumi — a faint, pleasant plum flavor that lingers without dominating.
Ume flesh and shiso powder deepen that character further, adding the herbaceous complexity of the ume-shiso combination that is one of Japan’s most instinctively satisfying pairings.
