Echigo Star of Niigata Rice Crackers Sweet & Salty

Star of Niigata is shaped like a star, and that is not a detail Echigo Seika left to chance.

The name is a double meaning: the star shape, and Niigata rice as the star of the product — the crackers are made from 100% rice grown in Niigata Prefecture, Japan’s foremost rice-producing region and the company’s home.

Saying so on the front of a bag carries weight here in a way that is hard to overstate.

The seasoning is amakara, sweet-salty, built on sugar and powdered soy sauce.

That combination is foundational to Japanese cooking — teriyaki, simmered dishes, the glaze on grilled eel all run on it — and on a rice cracker it produces something that keeps you reaching back: sweet enough to register as a treat, salty enough not to cloy.

Echigo Seika works dried shiitake powder in underneath, which adds a quiet umami depth that salt alone would not give.

The texture is sakutto, a light clean snap rather than the hard bite of a traditional senbei.

Echigo Seika has worked in Niigata since 1947, across mochi, packaged rice and rice confectionery, and this sits in its atarashii okome no okashi line — new rice sweets, where familiar ingredients go into formats that did not exist before.

The 80 g bag holds individually wrapped portions of about 20 g.
