Tohato Umaimon Nagewa Potato Snacks Monja

Monjayaki is Tokyo’s own, and it is stranger than anything else on a Japanese griddle.

A thin batter of flour and dashi, loosened almost to a liquid and cooked down on a hot plate with cabbage, seafood and sauce until it half-sets into something between a pancake and a sauce — eaten straight off the griddle with a small metal spatula rather than plated.

Tsukishima in central Tokyo has a street of monja restaurants and little else, and the dish barely exists outside the city.

The flavour comes from a monjayaki seasoning powder that reads as the whole dish rather than one element.

Powdered sauce and soy sauce supply the base, bonito powder and bonito extract the dashi, and squid, shrimp and aosa seaweed the seafood that goes onto the griddle.

Vegetable extract fills out what the cabbage would give.

Tohato’s umaimon line exists to do exactly this — take a regional speciality and put it on a potato ring.

Nagewa means ring toss, and the rings are thin enough to wear on a fingertip, breaking with a light shattering sakusaku.
