Calbee A-La-Potato Chips Lightly Salted

A-La-Potato exists only in autumn, and the reason is the potato.

Calbee makes it exclusively from shin-jaga — new potatoes harvested that same autumn in Hokkaido — which means the product cannot exist outside the window when those potatoes are available.

A new potato has higher moisture and a thinner skin than a stored one, and its flavour is cleaner and sweeter; it is also the reason the slices are cut thick, since there is enough potato character to be worth tasting.

The seasoning stays out of the way.

Salt, sugar, starch and dextrin, and that is the whole list beyond potato and oil — with 60% of the salt coming from the Sea of Okhotsk, off Hokkaido’s northern coast, chosen for a rounder, more mineral salinity than refined salt gives.

Calbee’s framing is that the point is the potato itself, freshly harvested.

Calbee has been working with Japanese potatoes since 1975 and runs A-La-Potato as an annual seasonal release that Japanese shoppers watch for.

The ingredient list carries none of the 28 designated allergens. 60 g to a bag.
