Dodekai Ramen Tenkaippin Rich Karaage is a snack built on a marinade rather than a seasoning, and the distinction is the point.
Oyatsu Company has taken karaage — Japan’s bite-sized fried chicken, thigh meat steeped in soy, garlic and ginger before it ever meets the oil — and reproduced the version where the marinade is Tenkaippin’s kotteri soup.
What comes through is deeper and meatier than a straight soup flavour: roasted chicken, garlic underneath, and the heavy stock running through all of it. Oyatsu Company’s own word for the result is kuse ni naru, habit-forming.
Tenkaippin is the Kyoto ramen chain whose broth is thick enough to coat a spoon — chicken and vegetables simmered for hours until the stock turns opaque and clings to the noodles.
Kotteri, meaning rich and heavy, is the name of its signature bowl and has become shorthand nationally for that style of ramen.
Karaage is the other half of the equation, and in Japan it is not a side dish but a staple: bento boxes, izakaya menus, convenience store counters, the most ordered thing in casual dining here.
The noodle is Baby Star’s dodekai, meaning huge — wide, flat and ridged rather than the fine strands the brand has been built on since 1959, which gives both a heavier crunch and more surface for a seasoning this dense.
Released in September 2026 for Tenkaippin’s 55th anniversary, alongside the plain kotteri version, with the chain’s founder illustrated on the front of the pack.
