Mekabu is the sporophyll — the ruffled base section — of the wakame seaweed plant, and the stem that runs through it is one of the less celebrated but more texturally interesting parts of the plant.
Where mekabu itself is soft and mucilaginous, the stem is firm and pleasantly chewy, with a clean oceanic flavor and a satisfying resistance that makes it work particularly well as a snack rather than an ingredient.
Sokan’s Kuki Mekabu uses wakame stems sourced from the Sanriku coast of Iwate and Miyagi Prefectures — one of Japan’s most productive seaweed-harvesting regions, where cold, mineral-rich Pacific currents produce wakame with a pronounced savory depth.
The stems are salt-cured, then seasoned in a pickle-style flavoring: vinegar providing a clean acidity, sugar balancing it toward the sweet-and-sour quality characteristic of Japanese pickled vegetables, with salt and sugarcane extract rounding the whole thing out.
The result is a snack that is simultaneously familiar and slightly unusual — the chew and oceanic character of good seaweed, redirected toward a flavor profile that sits closer to Japanese pickles than to the savory-only seasoning most dried seaweed snacks use.
Zero fat, 19 kcal per bag, individually wrapped sticks in a format designed for easy snacking on the go. The kind of low-calorie snack that actually tastes like something.
