Sokan Kuki Wakame Seaweed Stem Snack Ume Shiso

Kuki wakame is the stem — the thick central rib running up the wakame frond, firmer and denser than the leafy parts that end up in miso soup.

Sokan blanches and salt-cures Japanese-grown stems, cuts them into pieces and seasons them, and the texture is what the bag advertises in red across the top: shaki-shaki, a crisp, watery snap with real resistance, closer to a raw vegetable stem than to anything dried.

The red kokusan badge on the front matters too — most wakame sold in Japan is imported, so a domestic one is stated openly rather than buried in the ingredient panel.

This version is seasoned with umezu, and the vinegar has a pedigree.

Nankō ume from Kishū — the old name for Wakayama — is the benchmark Japanese plum, grown on the warm Kii Peninsula and prized for thin skin and soft flesh, and umezu is the liquid drawn off during its salting: not vinegar in the fermented sense but the brine the plums give up, intensely sour and salty with the plum’s own fragrance carried through.

What that does to seaweed is specific.

Umeboshi is the most Japanese of flavours — the pickled plum at the centre of a bento, sharp enough to make a first-timer flinch — and the sourness cuts cleanly through the wakame’s marine savouriness rather than sitting on top of it.

Shiso, the perilla leaf pickled alongside plums to give them their red colour, runs underneath as an herbal, faintly minty note.

Sharper and more bracing than the lightly salted version: sour first, salty second, seaweed third.

Pieces come individually wrapped inside the 68 g bag, which makes it a picking snack, and a natural one with beer or shochu.
