Wakame is known by most people as the soft, silky seaweed that floats in miso soup.
The stem is something else entirely — the thick, fibrous central rib that runs through the leaf, chewy and substantial in a way that the rest of the plant is not.
Kuki wakame is that stem, prepared as a snack, and Sokan has been making it into one of Japan’s most satisfying low-calorie treats for years.
The texture is the reason people come back. Kori-kori — the Japanese onomatopoeia for a firm, springy, satisfying chew — is what distinguishes kuki wakame from every other seaweed snack on the market.
It resists slightly before giving way, releasing its flavor slowly and continuously through a chew that is long enough to feel genuinely satisfying.
It is the kind of texture that makes a small bag feel more substantial than its weight would suggest.
The seasoning is built with restraint. Lightly salted — usu shio — the stems are seasoned with sugar, salt, and mirin, creating a gentle sweetness that balances the natural oceanic character of the wakame without competing with it.
Lactic acid calcium is added, contributing to the mineral content that makes kuki wakame a snack worth reaching for beyond its flavor alone.
Sorbitol provides a clean, mild sweetness that rounds the finish.
The result is a snack that earns its place alongside Japan’s great dagashi seaweed traditions — the same category as su-kombu, but with a different texture, a different flavor profile, and a different reason to keep eating. Low in calories, high in satisfaction, and entirely its own thing.
