Japan snacks on seaweed, and not only as the thin toasted sheets sold abroad as nori.
Mekabu is the thick, frilled base of the wakame plant, the part just above the holdfast where the spores form, and kuki mekabu is the stem section of it — denser and firmer than the fronds people know from miso soup.
Sokan cuts it into bite-sized pieces and seasons it lightly with salt, and the texture is the point.
Japanese calls it korikori: a firm, resistant crunch with real spring to it, closer to a cartilage snap than to anything crisp.
The seasoning is deliberately restrained.
Salt leads, with sugar, mirin and sugarcane extract rounding it out and a touch of acidity keeping it bright — enough to season the seaweed without covering the marine flavour underneath, which is the whole reason to eat it.
Sokan is a Tochigi company specialising in what Japanese calls sozai-gashi, snacks made from a single whole ingredient rather than assembled from flour and sugar, and this is one of its signature lines.
A bag is 23g and 21kcal, with 0.9g of dietary fibre.
This is a genuinely everyday thing in Japan.
Bags of seasoned kuki wakame and mekabu sit next to the crisps in convenience stores, get eaten at desks, and turn up as a drinking snack alongside beer and shochu.
For anyone outside Japan who has only met seaweed as a wrapper for sushi, it is an unexpected category — savoury, chewy, salty and faintly sweet, with nothing else quite like it on a Western snack shelf.
